Apple Cinnamon Soy Butter Bagels:

Makes: 1 serving

Ingredients:

¼ teaspoon cinnamon
1 tablespoon America's Choice Kids Smooth Soy Butter
½ Apple, washed and thinly sliced (any variety)
1 America's Choice Kids Whole Wheat Bagel, split and toasted

 

Directions:

COMBINE soy butter and cinnamon. SPREAD evenly on each bagel half.

 

TOP each bagel half with sliced apples and sprinkle with additional cinnamon if desired.

Cinnamon and Raisin Cream of Wheat: 

Prep: 2 minutes
Cook: 2 minutes
Makes: 1 serving

Ingredients:

¾ cup 1% milk

3 Tbsp Whole Grain Wheat Farina

1 tsp Cinnamon

½ Banana, sliced

2 mini boxes America's Choice® Kids Sun Dried California Raisins

 

Directions:

Stove Top:

  1. Using a saucepan, bring the milk to a BOIL
  2. ADD farina and cinnamon and constantly STIR with a whisk.
  3. COOK farina for about 1 minute. ADD bananas and continue to STIR for one more minute until farina comes to a BOIL and farina is thick.
  4. STIR in raisins and serve warm.

Using Microwave:

  1. In a microwavable bowl combine milk and farina. Microwave on HIGH for 60 seconds.
  2. REMOVE and STIR in cinnamon and bananas. Microwave for an additional 1 minute 30 seconds and remove promptly.
  3. STIR in raisins and serve warm.

Parmesan Skillet Chicken with Broccoli: 

Prep: 5 minutes
Cook: 25 minutes
Makes: 4(4-ounce) servings

 

Ingredients:
1/4 cup each bread crumbs and shredded parmesan cheese
4 (4-ounce) America’s Choice® boneless, skinless chicken breasts pounded ½-inch thick
2 tablespoons Extra Virgin Olive Oil
2 cups America’s Choice® Frozen Broccoli Florets, thawed
½ cup onion, chopped
1 (28 ounce) can Crushed Tomatoes with Basil, Garlic and Oregano

 

Directions:

  1. COMBINE bread crumbs and Parmesan cheese in a shallow dish.
  2. DIP chicken in mixture to coat both sides.
  3. In skillet with oil, BROWN chicken on each side over medium heat; remove chicken. SAUTÉ onion until tender, and add broccoli.
  4. RETURN chicken to skillet with the crushed tomatoes.
  5. SIMMER 15 minutes and serve immediately.

Veggie Chicken Kabobs:

Prep: 15 minutes
Marinate: 30 minutes
Cook time: 15 to 20 minutes
Makes: 6 (1-Kabob) Servings

 

Ingredients:
¼ cup America’s Choice® 30 Minute Marinade
1 pound boneless chicken breasts, well trimmed and cut into 1-inch cubes
1 small zucchini, cut into 1/2 –inch-thick slices
12 cherry tomatoes
6 metal skewers

 

Directions:

  1. In a medium glass bowl, add marinade to chicken, zucchini and tomatoes; toss until lightly coated.
  2. Cover; marinate in refrigerator 30 minutes.
  3. Drain chicken and vegetables, reserving marinade. Alternately thread chicken and vegetables onto skewers, ending with cube of chicken.
  4. Brush barbecue grid with olive oil.
  5. Grill Kabobs, on covered grill, over hot coals turning frequently and brushing with reserved marinade. Cook the chicken until it is white in the center.

NOTE: Beef top sirloin or top round steak can be substituted for the chicken. However, nutrition facts will be altered.
